This recipie was given to me by a lovely mexican woman at a restaurent on Isla Mujeres, Mexico. I could not leave the country without it :)
You can find all the peppers on e-bay.
10 Huajillo peppers 3 Anchos peppers 4 Cascabel peppers 4 Pasilla peppers 4 Chipotle peppers 10 Chile de arbol (arbol peppers) 4 Barras de chocolate (Abuelita) 1/4 Tomato 2 Large Plantains mashed 1/2 tb sesame seeds | 1 Large Onion 4 Bay leaves 1/2 tb oregano 1 pinch of Cumin 1 tb Peanuts 4 Saltine coookies 1/2 garlic head Salt to taste Pinch of Marjoram |
Fry everything together and drain
blend in blender with some water
fry onion separately
Blend everything together
Cook chicken separately then add sauce to finish in the oven
